Mascarpone cheese is a rich, usually milky-white colored double-cream to triple-cream cheese. The color of the cheese can range anywhere from milky-white to the color of room temperature butter. A tartaric acid and water mixture is added to cause the mixture to thicken and become dense. Once this process is complete the cream is refrigerated for about twelve hours in special containers. While it is being refrigerated, the whey separates. The whey is taken out and the mascarpone is put into cloth bags for 24 more hours to allow the last of the whey to separate. Mascarpone cheese has a high fat content of 47%. After it has been made, it is best to use the cheese within three to four days.
Similar to other cheeses, mascarpone cheese can be used in several different ways. The cheese is usually used alone or with a small amount of sugar added. The cheese can be blended with other flavors or sweetened with fruit. A favorite regional Italian dish is mascarpone mixed with anchovies, mustard, and spices. The taste has a resemblance to butter-cream frosting that is used commercially on cakes, making the cheese a delectable treat for dipping, filling, or frosting. It can also be melted and used for a sauce.
